Hot Cold Sesame Noodles

A spicy noodle dish that can be served cold. Adds a little pizazz to a picnic or barbeque.

Ingredients:

1 lb. Noodles (Cantonmen 2x9oz or Organic Soba - almost any thin noodle will work)
4 oz. Soy sauce (Kikkoman Usujio, Superior Soy, Organic Tamari)
4 oz. Sesame Tahini (Once Again Organic or Sahadi)
3 oz. Hot sesame oil (Kadoya-very hot)
1.5 oz. Sesame oil (Kadoya or any "toasted" type - more flovor)
1.5 oz. Honey (Finger Lakes [Waid's] clover or wildflower etc..)
1.5 oz. Fresh chopped garlic
2 oz. Plain vegetable oil (extra virgin olive oil is best - canola is fine too)
2 oz. Rice vinegar - unseasoned (Kame unseasoned or Wan Ja Shan or lemon juice)
1 cup, Chopped green scallions about one bunch
1 tbls. Sesame seeds (optional - adds a little crunch)

Boil noodles in lightly salted water. Drain and rinse with cold water. Set aside.

Combine all other ingredients except vinegar, onions and sesame seeds. Blend together with whatever mixing gadget you prefer. A food processor or blender is great for this, but not essential.

Add vinegar last and blend in (important to add vinegar last - the acid in the vinegar will cause the proteins in the tahini to clump together if added too early).

Add sauce to noodles and top with scallions and optional sesame seeds or other garnish.
