Arugula and Black Bean Pasta Salad

Quick and easy serves 4-8
Cook and drain the pasta, coat with oil. While the pasta is cooking you can slice and dice. Soak the beans in the lime juice and salt too while waiting. After the pasta is cooked combine all but the arugula. You may need a little more olive oil here to balance the lime juice. Mix in arugula just before serving. May be served warm or cold.

Arugula:  A mustard (Eruca sativa L) also known as rucola, roquette, rocket, and rugula.  It makes a great addition to salads, soups, or adds zest to a vegetable dish.  Use in pasta dishes or sauté the leaves.  Texture and zing make this variety a real tasty treat!

Vertissimo:  This salad includes chervil and may include several of the following Asian greens: Tokyo Bekana, Fun Jen, Komatsuna, or Beka Santoh.

Tatsoi:  A relative of bok choy, tatsoi (Japanese name) is a sweet green with a cupped leaf and a tender white stem.  Makes a great bed for fish, salad ingredient, salad (toss with Asian pear slices and toasted pecans), a stir fry with ginger, or add to a pita or other sandwich.

Fennel Salad:  Includes: at least three lettuce varieties including romaine and leaf types; mazuna and/or kale; water cress, and baby fennel.

Red Mix:  A combination of fennel salad and arugula.

GV Hot Salad:  Includes: mustard, both mild and hot; water cress; and at least three lettuce varieties including romaine and leaf types.
