Wild Rice with Cranberries and
Pine Nuts
a Colorful Healthy Side Dish
INGREDIENTS:
3 tbs. butter
or Extra Virgin Olive Oil
1 medium onion, diced
1 tsp. finely chopped fresh rosemary
1 cup wild rice
2 cups broth (chicken or Vegetarian broth or bullion cubes)
1/2 cup dried cranberries
("regular" sweetened or fruit juic sweetened)
1/2 cup pine nuts, toasted
(or slivered blanched almonds)
Freshly ground black pepper plus salt to taste
Heat butter over medium heat in a frying pan and sauté onions
and
rosemary until the onion
is deep golden, about 10 minutes. Add the wild
rice and stir to coat. Add broth. Bring to a boil, then reduce the heat
and cover. Simmer over medium low heat until the grains are slightly
open and tender but not mushy, about 50 minutes. Let rest covered for 5
minutes then stir in cranberries, pine nuts, and pepper. Taste and
adjust seasonings. Serve warm or cold. Serves 4 as a side dish.
