Wild Rice with Cranberries and Pine Nuts
a Colorful Healthy Side Dish

INGREDIENTS:

3 tbs. butter or Extra Virgin Olive Oil
1 medium onion, diced
1 tsp. finely chopped fresh rosemary
1 cup wild rice
2 cups broth (chicken or Vegetarian broth or bullion cubes)
1/2 cup dried cranberries ("regular" sweetened or fruit juic sweetened)
1/2 cup pine nuts, toasted (or slivered blanched almonds)
Freshly ground black pepper plus salt to taste

Heat butter over medium heat in a frying pan and sauté onions and rosemary until the onion Wild Rice and Cranberry Dishis deep golden, about 10 minutes. Add the wild rice and stir to coat. Add broth. Bring to a boil, then reduce the heat and cover. Simmer over medium low heat until the grains are slightly open and tender but not mushy, about 50 minutes. Let rest covered for 5 minutes then stir in cranberries, pine nuts, and pepper. Taste and adjust seasonings. Serve warm or cold. Serves 4 as a side dish.
