Baked Salmon w/ Red Pepper

I use the ECOFISH salmon we sell in our freezer section. [ more recipes on their web site ]

Ingredients:

• 4 pieces salmon filets approx. 1/2 lb ea
  
• juice of 1 lemon
  
• 1 small red pepper chopped med. to fine
  
• 1 small red onion chopped med. to fine
  
• 2 or 3 cloves garlic crushed
  
• olive oil
• 2 tsp. dried basil
• 2 tsp. dried dill weed
• pinch saffron to taste
  
• dashes of pepper and salt
  
• coat baking pan with oil, lay fish in skin down, coat fish with lemon juice then crushed garlic on top ... then coat fish with herbs, spices and salt
  
• sprinkle onion and pepper around the fish in the pan
  
• add a little more oil on top
  
• bake approx. 25-30 minutes at 275-300 or until done
  
• Serves 4
