Cold Curried Couscous

Great vegetarian serve cold dish for pot-lucks.

Ingredients:

• 2 cups natural evaporated cane juice - such as Florida Crystals or similar.
• 2 cups water
• 3 pints cranberries - 24 oz by weight
• 1 tbls lemon juice
• Other fruit may be added in small quantities - we often add a peeled chopped orange or tangerine
• Combine sugar and water.
• Heat to a boil, boil five minutes.
• Add cranberries and other fruit, cook till skins pop, then reduce heat and simmer about 20 minutes
• If you want a smooth sauce you can run it through a food mill while still hot, otherwise leave as is for a chunkier texture.
• Chill completely to serve.
• Makes 1 1/2 quarts
