Applesauce Muffin Recipe (wheat free and sugar free)

 

3 Large eggs
5 Tablespoons of vegetable oil (I use extra virgin olive oil)
1 ½ cups of unsweetened applesauce
2 cups of oat flour (I use oatmeal that I grind in to flour in my food processor)
¾ teaspoon baking soda
2 teaspoons baking powder (I use Rumford because it is aluminum free)
½ teaspoon nutmeg
½ teaspoon cinnamon
¾ cup of raisins
1 cup of chopped walnuts

 Beat together eggs, oil, and applesauce in bowl #1.   In bowl #2, mix together the flour, baking soda, baking powder, and spices.    Add raisins to flour mix and stir.  Combine bowls and mix-----add walnuts.

Pour in to 9 medium size muffin cups that are oiled and floured.

Bake at 375 degrees for 20 to 25 minutes.

(Can also be baked in a 9x9 inch oiled and floured pan and baked at 375 degrees for about 35 minutes then cut in to 9 squares when cooled.)
